Simple Healthy Banana Bread Recipe with Honey
One of my favorite ways to bring great smells into my home is through baking. It’s a great way to get everyone in the house gathering in the kitchen to find out what that delicious aroma is.
Banana bread is a favorite of my whole family. It’s always greatly enjoyed by both adults and children.
This is based on the classic banana bread recipe, but it’s sugar-free with raw honey used instead. Also, instead of butter, I use healthy coconut oil.
Plus, I cook and bake with as many organic ingredients as possible for optimal nutrition and flavor.
It’s also a great recipe to use up old bananas. The browner and more spotted the bananas are, the better they are for baking as the sweeter they become.

Banana Bread with Honey Recipe
1/4 c. coconut oil, melted
1/2 c. raw honey
2 eggs
1 c. mashed bananas (about 3)
1/4 c. greek yogurt
1 tsp. baking soda
1 tsp. vanilla extract
1 tsp. cinnamon
1/2 tsp. salt
2 c. all-purpose flour
Optional: 1 c. chocolate chips or chopped walnuts
Preheat oven to 350 degrees F.
Butter a loaf pan.
Mix all ingredients in a big bowl.
Pour into the loaf pan.
Bake in center of oven 55 to 65 minutes, until golden brown on top and a skewer poked into it comes out clean.
Cover the top with baking paper for the last 20 minutes or so, if the top is browned but the inside needs more cooking.
Let cool for 10 minutes, remove from pan, and then let cool for 10 more minutes before slicing.

Tip: Freezing Bananas for Baking
If I have bananas that are ideal for baking, and I’m not prepared to bake with them yet, I just put them in the freezer whole with the peel still on them.
Then when I want to make banana bread I take as many of the bananas out of the freezer out as I need and let them thaw on the counter for an hour or so.
This is an easy way to make sure your bananas don’t go to waste if they turn brown, and then you always will have bananas in your freezer on hand to bake with.
Peel them and mash them, and you are ready for baking your bread, or muffins, or whatever you want to bake with your mashed bananas.
