Heirloom Tomato Toast with Za’atar Recipe
This is comfort food that has been elevated.
Cheesy tomato oven-faced sandwiches have always been a comfort food that I’ve enjoyed.
This was one of the first recipes I learned how to make growing up.
This is the upgraded version that highlights the freshness of heirloom tomatoes, makes it absolutely craveable with the earthy, smoky, savory flavor of za’atar and is served on a thick slice of sourdough bread.
Za’atar is an incredible seasoning that makes everything so good. It’s traditionally made with the wild herb hyssop, which it is named after.
The herb hyssop has many wellness benefits including strengthening the immune system, respiratory system, and gut health.
There are many variations on the traditional recipe, which usually include hyssop, sesame seeds, sumac, olive oil, and salt. Some versions use oregano or thyme in addition or as a replacement to hyssop.
I love za’atar because it’s amazing on a multitude of savory dishes: roasted vegetables, chicken, hummus, cucumber slices, hard-boiled eggs, or mixed in olive oil to dip fresh bread into.
As a kid, I would make these open-faced sandwiches Italian-style, like a little pizza. If you don’t have za’atar, you can substitute for it in this recipe with other savory herbs and spices, such as Italian seasoning, or a blend of oregano, marjoram, thyme, garlic, salt, and pepper.
This is a perfect way to highlight the fresh garden flavor of a ripe heirloom tomato.
The herbs of hyssop, oregano, thyme, and marjoram are all supportive of our health and rich in micronutrients. Adding herbs to our comfort foods increases their nutritional qualities.
Spicing food up with herbs increases the nutritious health benefits and the flavor.

Heirloom Tomato Toast with Za’atar Recipe
Ingredients:
Sourdough bread
Organic heirloom tomato
Organic 3-cheese grated Mozzarella, Cheddar, and Monterey Jack blend
Salt
Pepper
Microgreens
Optional: Jalapeno peppers, chopped (fermented and pickled)
Directions:
Preheat oven to 350 degrees F.
Slice fresh sourdough bread into thick slices and place on a baking sheet.
Cover the top of the bread with grated cheese.
Slice tomato and place on top of the grated cheese.
Sprinkle more grated cheese on top of the tomato slices.
Sprinkle chopped jalapeno peppers on top (omit if you prefer, but I LOVE the hot peppers!)
Season with salt, pepper, and za’atar.
Bake for 10 minutes until the cheese is bubbly on top.
Top with microgreens.
