I love hummus!

It’s a great recipe to make at home because the homemade version tastes exceptionally better than storebought, as well as being fresher.

Hummus is a traditional dish from the Middle East made with creamy cooked garbanzo beans mixed with tahini, olive oil, lemon juice, salt, and spice.

This delicious dip and spread has a long history, going back thousands of years, and is popular in Israeli, Greek, and Arabic cuisines today.

I recommend using organic, fresh, and high-quality ingredients for best flavor and results.

This is an easy, simple, and versatile recipe that can be prepared quickly and served immediately, or may be made ahead of time and will stay fresh for many days chilled in the refrigerator.

Ingredients

  • 2 cans chickpeas, drained (1/3 c. liquid reserved)

  • 1/2 c. tahini

  • 1/3 c. olive oil, plus more for the top

  • 4 cloves garlic. minced

  • 2 lemons, juiced, 1/3 c. 

  • 1.5 tsp. salt

  • 1 tsp. cumin

Add all ingredients to a food processor and process until smooth.

Add about a tablespoon at a time of aquafaba (the reserved bean water) as needed, to give it enough hydration to blend smoothly. Be careful not to add too much, just a small drizzle at a time as needed.

Run the food processor for several minutes for a creamy consistency. The key to getting smooth hummus is to run the food processor for long enough. Taste it to see if it’s the right consistency for you. Some people like it chunkier and others smoother.

Serve drizzled with extra-virgin olive oil, and sprinkle with a light garnish of paprika and parsley.

This is wonderful to eat with sliced carrots, celery, cucumbers, and red peppers. It’s also great with crackers.

I absolutely adore it spread onto a slice of homemade bread topped with microgreens.

You can also make different variations on this recipe by adding a head of roasted garlic, roasted red peppers, soaked sundried tomatoes, and more.

It will also stay fresh in a sealed container in the refrigerator for several days.
