Chocolate Coconut Mounds Recipe: A Healthy Easy Treat

These chocolate covered coconut patties are a delicious special homemade treat with healthy ingredients.

They are hand dipped in a rich raw cacao coating and have a decadent inside filled with creamy coconut butter, coconut flakes, and barhi dates.

I love dates for their lovely natural sweetness while being high in a variety of nutrients, antioxidants, and fiber.

Date have a ton of health benefits and are a favorite snack of mine.

I recently got a box of delectable barhi dates, which are the softest dates with an amazing butterscotch caramel flavor.

I highly recommend trying out the barhi dates if you can, they are awesome to blend up for sweetness in smoothies and great for many recipes such as this one where you want a creamier softer date. I also eat them on their own. I ordered a case online from the Raw Food World, along with the raw cacao powder I used in this recipe.

If you can’t find barhi dates, then you can absolutely use medjool dates or any other kind of date, just make sure they are fresh and moist, not hard and dry, for ease of blending.

I’m also a huge fan of raw cacao, as it’s a superfood filled with magnesium, b vitamins, and flavanoids.

This recipe combines several of my favorite ingredients and is so good!

It tastes like candy, but you can feel good about it knowing that it’s packed with antioxidants and nutrients.

Chocolate Coconut Mounds Recipe

Coconut Date Filling

3/4 c coconut butter
1/2 c coconut, shredded
1 c barhi dates, pitted
1/2 tsp. vanilla extract
1/4 tsp. almond extract
1/8 tsp. salt

Raw Cacao Shell

1/2 c. raw cacao butter
1/2 c raw cacao powder
1/4 c rice syrup, honey or maple syrup
Pinch of salt

Directions

  • Mix the coconut date filling ingredients all together in a food processor until an even consistency.

  • Form about 1 Tbs. of filling into patties, put on a tray covered with parchment paper or a silicone mat, and place in the freezer to firm up for about 30 minutes.

  • Melt the raw cacao butter in a bain marie until liquid. Add the cacao powder, sweetener and salt and stir until combined. Take off the heat when an even consistency.

  • Dip the firm coconut patties into the chocolate to coat completely and place back on the tray. Chill the chocolate covered coconut date patties in the fridge until firm and you are ready to eat.
